Stuffed Green Peppers Dish

Here's what we had for supper tonight, some Stuffed Green Peppers. Make some mashed potatoes and frozen corn and have a great supper. The recipe is below.

Easy Chipped Beef

  • 1 pound hamburger
  • 1 small onion chopped - optional
  • 1 can cream of mushroom soup

Fry onion with the hamburger and drain. Add the undiluted cream of mushroom soup. Heat through. Serve on butter toast or sliced biscuits on a plate.

My Note: I have used this recipe to make a easy hot dish. All I added was either a drained can of peas or green beans. Heat and serve.

Ground Beef Put Together

  • 1 tablespoon shortening
  • 1 lb ground beef
  • 1 large onion, chopped (1/2 cup)
  • 1 medium green pepper, coarsely chopped (1/2 cup)
  • 1 #2 1/2 can can tomatoes (3 1/2 cups)
  • 1 cup rice (quick cooking type)
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 1/8 tsp. pepper

Melt shortening in a large skillet, add beef and stir occasionally until well browned. Add other ingredients, cover, bring to boil, then simmer for 1/2 hour.

Fix and Forget Crockpot Dish

  • 1 1/2 lbs. hamburger
  • 3/4 cup rice
  • 1 can mixed vegetables with liquid
  • 1 package onion soup mix
  • 1 can cream of mushroom soup
  • 1/2 soup can water

Brown hamburger and place it into crockpot. Add rice, can of vegetables, onion soup mix, cream of mushroom soup and the water. Cook on low heat for about 5 hours, or until rice is done.

Stuffed Green Peppers

Stuffed Green Peppers: For supper I made some stuffed green peppers from the garden. They were still kind of small but I used them anyway. I made the tomato sauce this morning just for this dish.
I have my own recipe for Stuffed Peppers, it's similar to the one below, except I don't precook the peppers. This dish is ready to go in the toaster oven at 350°. I'll cover it with foil and let it cook about 40 minutes.

Stuffed Green Peppers

Wash peppers, cut large ones in half lengthwise, cut tops from small ones. Remove stem, seeds and seed parts, leaving clean shell - Place in boiling salted water and boil 5 minutes.
Drain. Stuff with stuffing below - Place in shallow baking dish containing small amount of water - Bake 25-30 minutes or until brown at 375 degrees.
  • 1 lb. beef, ground
  • 1 Tbsp. grated onion
  • 1/3 cup celery, finely chopped
  • 1 1/2 cup cooked rice
  • salt and pepper
  • tomato sauce

Brown beef slightly, stirring to keep meat in separate particles, add onion and celery and cook about 5 minutes longer or until vegetables are soft. Add rice and season to taste. Moisten with tomato sauce over stuffed peppers. Makes about 6 stuffed peppers. (I use this recipe sometimes and instead of stuffing peppers slice them in the stuffing to make casserole and pour remaining tomato sauce over top before baking.)

Tip: You can freeze whole green peppers. Just cut the top off, clean out the seeds and put in a freezer bag. When ready to use, slightly thaw and stuff them and bake. I have also froze them already stuffed. Just take out of the freezer, let thaw, then bake.

Top Hat Stuffed Peppers (Microwave)

  • 5 green peppers
  • 2 lbs hamburger
  • 1/4 cup chopped celery
  • 1 cup Minute rice
  • 1/3 cup catsup
  • 2 Tblsp chopped onion
  • 1 Tblsp Worcestershire sauce
  • 1 tsp salt
  • 1/8 tsp garlic powder
  • dash of pepper
  • 1 egg
  • 1 can (8oz) tomato sauce
  • 1 tsp sugar
  • 1/4 tsp. dried basil leaves

-Cut thin slice from stem end of each pepper. Remove all seeds; wash inside and out.
-Mix hamburger meat, celery, rice, catsup, onion, Worcestershire sauce, salt, garlic powder, pepper and egg. Fill peppers with meat mixture. Place in an 8x8x2" glass baking dish.
-Cover loosely and microwave until meat is firm, 10 to 12 minutes.
-Mix tomato sauce, sugar, and dried basil leaves in a 2 cup glass measure. Microwave to boiling, 2 to 3 minutes. Serve sauce over peppers. 5 servings.

My Easy Minute Steaks

  • Ground Beef
  • Flour to coat
  • Salt and pepper to taste

Make some hamburger patties with your ground beef. Heat a little oil in your electric skillet on 350°. Put some flour in a dish, and carefully coat your patties in the flour. Add them to the skillet.

Let brown on each side. Then turn your skillet down to 300-325 and pour a little water in and put the cover on. Let cook on low for 20 minutes or till done. Make some mashed potatoes, open a can of peas, serve with slices of bread.

Stuffed Cabbage Rolls

  • large cabbage leaves
  • 1 lb. hamburger
  • 1/2 lb. sausage
  • 1/2 cup chopped onions
  • 1 egg
  • 1 tsp. salt
  • 1/4 tsp. pepper and a little tomato sauce(you can use rice also)

Combine all ingredients, except cabbage and tomato sauce. Put a head of cabbage in a pan of very hot water for a few minutes, then take out. The leaves will come apart easily.

Shape meat mixture into loose rolls and wrap each meat roll in a cabbage leaf. Fasten with a toothpick. This will fix about 8 to 10 leaves.

Put in pan and pour tomato sauce or tomato soup over them and put in oven for about 40 minutes at 350 degrees.

Note:These can be prepared ahead and put in your freezer and cooked as needed.

Lazy Cabbage

  • 1/2 cabbage head, sliced fine
  • 1 lb. hamburger
  • 1 cup cooked rice
  • 1/2 cup chopped onions
  • 2 tablespoons ketchup or tomato sauce
  • Several tablespoons sour cream
  • Salt and pepper to taste

Heat your electric skillet to 350°. Add hamburger and onion, cook till tender, and move to one side of your skillet. On the other side add a little oil and add the finely cut cabbage. Put the lid on and let the cabbage cook until tender, stirring occasionally.

When tender fix the ground beef and cabbage together, add the cooked rice, ketchup and sour cream. Stir altogether, and reduce the heat to simmer for 25 minutes.

Cheesy Bacon Beef Roll

  • 6 slices bacon
  • 1/2 cup tomato juice or tomato soup
  • 2 Tblsp. ketchup
  • 1 egg
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. chili powder
  • 1/2 cup onion, chopped
  • 2 lbs. hamburger
  • 3/4 cup cracker crumbs
  • cheese

Fry bacon till crisp; crumble fine. Saute onion. Combine tomato juice, ketchup, egg, chili powder, salt and pepper. Mix well. Add hamburger, crumbs and onion.

Form a rectangle, rolling it between wax paper. Remove top sheet. Add cheese and sprinkle with bacon. Roll firmly in jelly roll fashion. Flatten each end of the beef roll to help keep cheese from cooking out.

Place in shallow baking dish. Place in 325 degree oven. Combine ketchup and brown sugar in a small saucepan. Bring to a boil, stirring.

After 45 minutes of baking time, spread roll with 1/2 of glaze. Bake another 45 minutes and spread with remaining glaze and serve. Approximately 8 servings.

My Note: Great idea! Roll out the ground beef mix, sprinkle with bacon bits and cheese, then roll it up and bake!

Hungarian Goulash

  • 1 lb. ground beef
  • 1 good size onion
  • salt and pepper to taste
  • 1/2 green pepper
  • 1 Tblsp. chili powder
  • 1 cup chopped celery
  • 1/2 pkg. noodles
  • 1/2 tsp. mustard
  • 1 can tomato sauce
  • 1/2 can water

Brown meat in chunks. Add onion, salt, pepper, celery. Brown a few minutes more. Add tomato sauce and about 1/2 can water.

Cook noodles in salt water about 5 to 10 minutes. Mix all together and bake about 1/2 hour in a moderate oven.

Note: MODERATE OVEN = 350 to 375 degrees
